I’m a dedicated Personal Trainer with eight years of experience. I’m also a small women owned business owner of a Fitness studio called Limitless. I’ve been Plant-based for 8 years and I strive to guide my family, friends and clients alike to live an active and healthy lifestyle. Lastly, I’m a Plant-based Health Coach and I obtained my certification from the Food Revolution Network with the guidance and under the mentorship of John and Ocean Robbins.
Amy Brink-Peterson
Amy graduated in 2024 and recently started her own coaching business Coach Amy. She supports vegan and plant-based changemakers—especially women — on their journey to reclaim greater health, resilience, and wellness. Drawing from her own experience with burnout, Amy’s coaching goes beyond behavior change, guiding clients toward a deep identity transformation that empowers them in their capacity to lead, sustain, and thrive for the long term. Amy aims to meet people where they are at and celebrate any movement toward a more plant-based lifestyle. For Amy, veganism is a practice of loving kindness that includes not only other animals — but also ourselves.
Chef Agathe Mathieu
More than 20 years ago, I reversed crippling arthritis through a whole food, plant-based lifestyle. This transformation sparked my passion for creating nutritious, delicious meals and empowering others to heal through food. As a mother of three, I understand the challenges of raising healthy eaters and have mastered recipes kids love. A graduate of the Plant-Based Coaching Certificate (PBCC) and former owner of Café by Tao, I now share my skills through coaching and teaching plant-based cuisine. For me, this lifestyle is more than a diet — it’s a path to healing, joy, and a healthier planet for all.
